Pinot Grigio

D.O.C. (Controlled Designation of Origin) Friuli Colli Orientali

Pinot Grigio, like Pinot Bianco, derives from a bud mutation of Pinot Noir. It is believed to be very ancient, since traces of its cultivation date back to Roman times. At the beginning of the nineteenth century it spread to northern Italy, finding favourable environmental conditions in Friuli Venezia Giulia.

The harvested grapes are delicately destemmed; subsequently there is a brief maceration in a pneumatic press for 4/6 hours. Soft pressing follows and the must thus obtained is clarified by decanting. The vinification continues with the alcoholic fermentation at a controlled temperature (16-18° C) in stainless steel containers. The wine is then aged for 3-4 months in stainless steel tanks, taking particular care in the preservation and evolution of the "fine lees", with frequent bâtonnage (stirring).

Coppery colour, the nose is reminiscent of warm bread crust and the scent of acacia flowers. A wine of great body, with a pleasantly bitter dry taste.

Ideal with fish and white meat dishes.
