The grapes, coming from areas of very low yield and in specialised cultivation, are subjected to soft pressing and the must thus obtained is clarified by decanting. The vinification continues with the alcoholic fermentation at a controlled temperature (20-22 ° C) in stainless steel containers. After fermentation, the wine is aged for 8-9 months in oak barrels, taking particular care of the preservation and evolution of the "fine lees", with frequent bâtonnage (stirring).

Picolit
D.O.C.G. Colli Orientali del Friuli
A very ancient grape variety which according to some sources was cultivated as far back as Roman times. It delighted the palates of Popes and emperors in courts throughout Europe. Produced in extremely limited quantities, since the 2006 harvest it is the proud holder of the controlled and guaranteed designation of origin certification, valid only for the Colli Orientali del Friuli (‘Eastern hills of Friuli’) area, where about 60 hectares are currently given over to the specialised cultivation of this precious native variety, once at risk of extinction but fortunately now restored to its former glory.

Colour Bright golden yellow wine, sometimes almost amber, after a few years of ageing. The aroma is intense, floral, fruity, incredibly complex, reminiscent of honeycomb. On the palate it is sweet-not-sweet, velvety, harmonious, full-bodied and powerful.
Great wine for contemplation, surprisingly good on mature, spicy cheeses and on the “formadi frant”. Also excellent with foie gras and with baked goods.
